Tourism in Kos has been a thriving activity for the past 30 to 40 years. Before that, the island of Kos was mostly dependant on the riches of its land. The fertile grounds and the abundant supply of water enabled it to be self sufficient and to provide for many of the surrounding islands like Kalymnos or Nissyros, where the land is much more arid. Surprisingly, Kos was never an island of fishermen, as you might expect. It has always been an island devoted to agriculture and to the breeding of a variety of animals such as goats, pigs... So it's no wonder that it's inhabitants have maintained a deep respect and love for the land that has provided for them for so many years. It is in that spirit that about fifteen years ago we acquired a piece of land a few hundred meters away from the hotel. Originally our goal was to produce some fruits and vegetables for our own consumption and to eventually create a small farm mainly with chickens, that would provide us with eggs on a daily basis. During the course of the years we learnt from our mistakes, we diversified into all kinds of fruits and vegetables, one thing led to another and suddenly we were actually increasing our production to levels where it can now, at least in part, accommodate the needs of the hotel... We now produce a variety of homegrown vegetables: tomatoes, cucumbers, eggplants, peppers, onions, garlic, salad, potatoes, and fruits: melon, prunes, watermelon, grapes..., just to name a few (you can admire some of them at the colorful display in the Olive-tree restaurant), of a quality that we can definitely be proud of. Our daily harvest is channeled to the hotel's kitchen where our chef adapts the daily menu to the available produce so our clients can enjoy a wide array of savory dishes full of fresh homegrown vegetables. We also have a handful of hens at the farm and from time to time, when available. we offer fresh eggs at the sea-side taverna.

Our goal in the future is to diversify into more and more produce so as to increase the variety of the products we offer, always ensuring a premium quality. Furthermore we are also thinking of creating a small animal farm, where our smaller guests can come and admire/pet the indigenous animals: donkeys, pigs, goats, chickens, rabbits... something to look forward to...
